My Easy Basic Healthy Salad in a Jar Recipe (from my meal prep video)



If you follow me on Instagram then you know all about my weekly food preps, which go down on Sunday nights most of the time if you don't. And if you don't, why don't you? I also did a one week meal prep video where I went through an entire weeks meal prep, preparing healthy breakfasts, lunches and dinners. These salad jars are some of my favorite to prepare each week and I constantly change up the ingredients, changing up my veggies, adding in some grains or cheeses and of course those dressings. Why in a jar? Mainly because the mason jar lid keeps it airtight and fresh in the fridge all week. Feel free to use any form of storage though.  As promised in that video, here is the exact recipe for the salad jars I prepped that specific week. Want more? Kale & Beet Salad in Jar with Balsamic Dressing
Yields: 4 Salad Jars 

Ingredients:

2 Cups Fresh Kale , chopped
1/2 Cup Shredded Beets 
1/2 Cup Chopped Red Pepper
1/2 Cup Chopped Cucumber
1/2 Cup Shredded Carrot 
1/4 Cup Black Olives

Dressing:

1 Large Fresh Clove Garlic, Crushed
1/4 Cup Balsamic Vinegar
1/4 Cup Honey
2 Tablespoons Extra Virgin Olive Oil
A Sprinkle of Pink Himalayan Salt

Method:

1. I like to always place my greens on the bottom of the jar as it stays fresh best this way.
Add about 1/2 cup of kale to each jar. Then layer in cucumbers, red peppers and black olives. I like to keep the shredded carrots and beets at the top as they stay freshest this way. Seal the jar once done. 

2. Combine the dressing ingredients in a large bowl and whisk until well combined. Disperse between 4 little dressing containers and seal with a lid. 

Note: These keep very well for 4-5 days in the refrigerator. You can also keep the veggies chopped and separated in containers and layer into jars each day for an even fresher option.
