My Pastrami Nachos with Pineapple Salsa Recipe


You may already know, I don't eat meat. The husband on the other hand has a sensitivity to dairy so he mostly eats meat at the moment. It's the first time in a while that I've looked at a plate I prepared for him and thought "hmm that looks tasty, I'd love to have a bite." Only just for a moment, and then I put together my own vegetarian version and it looked and tasted just as good. 


Pastrami Nachos with Pineapple Salsa 

Ingredients:

2 Cups, Corn Tortilla Rounds

1 6 oz. Package Pastrami, Chopped Small
1 Large Onion, Chopped
1 Tablespoon Olive Oil
1 Teaspoon Garlic Powder
1 Tablespoon Apricot Jam

Pineapple Salsa:

1/2 Cup Fresh Pineapple, chopped
1/2 Cup Grape Tomatoes, chopped
1 Small Red Onion, minced
1 Teaspoon Fresh Mint or Mint Spice, minced
The Juice of 1 Fresh Lime
Salt & Pepper to taste

Garlic Mayo:
3 Tablespoons Mayo
1/2 Tablespoon Olive Oil
1 Clove Garlic, Minced

Method:

1. Heat a salute' pan over medium heat. Coat the pan with olive oil and allow to begin simmering. Then add chopped pastrami and chopped onion and saute' until onion is translucent and meat is browned and cooked through- about 10 minutes. Usually the meat releases enough of it's own juices that nothing more is needed, add more olive oil if needed. Add garlic powder and apricot jam to the pan and mix in with the meat and onions, continue to cook for 2 more minutes or until it's slightly caramelized. Remove from the heat and reserve to the side. 

2. Prepare the salsa. In a small bowl, combine chopped pineapple, chopped grape tomatoes and chopped red onion. Add mint spice and the juice of the lime. Add a little salt & pepper as well. 

3. For the garlic mayo- combine mayo, olive oil and minced garlic and mix well. 

4. Lay the tortilla chips out in a circle on a round plate. Top that with spoonfuls of heated sautéed pastrami and onions. Add pineapple salsa over the top of the pastrami and drizzle the top of it all with garlic mayo.

5. Serve immediately.
