My Healthy Blueberry Muffins Recipe (Video)

I may have mentioned this already but I recently took off 20 pounds. I always yo-yo back and forth on this specific weight because I work hard to lose it but then return to my old habits fairly quickly once I do. This time I have been determined to keep my efforts intact and have been keeping to healthier eating habits. Doing so has helped me maintain my weight loss for 5 months thus far. I'll get into my whole weight loss story and talk about how exactly I've been maintaining that in a few different posts in the future. Today I want to discuss healthy muffins because I have been all about them lately and really enjoy them in the morning as breakfast along with my coffee. I'd also have to say of all the kinds I'e whipped up recently, these blueberry ones are some of my absolute favorite. A couple of things worth noting, do not feel the need to use a vanilla bean pod, a teaspoon of vanilla extract is truly good enough. Also, I used the walden farms pancake syrup but there are other sugar free healthier options for maple syrup out there to choose from. Also, if you don't have pumpkin spice, cinnamon is totally good enough. 

And now here's my recipe:




 Healthy Blueberry Muffins 

yields: 10-12 muffins

Ingredients:

1/4 Teaspoon Pumpkin Spice
1 Tablespoon Cacao Powder
1 Teaspoon Baking Powder
1 Cup Whole Wheat Flour
1/4 Cup Sugar Free Maple Syrup
1/4 Cup Melted Coconut Oil
1/2 up Unsweetened Vanilla Almond Milk
1 Vanilla Bean Pod
1/2 Cup Fresh Blueberries
2 Ripe Bananas

Method:

1. Start by combining all of the dry ingredients- pumpkin spice, cacao powder, baking powder and whole wheat flour in a large mixing bowl. Whisk gently but thoroughly. 

2. Combine all of the liquid ingredients- maple syrup, melted coconut oil and vanilla almond milk in a separate bowl. Whisk well to bring it all together. 

3. Mash down your bananas as fine as you can, or put them through a blender to puree. Add the based bananas to the liquid ingredients and mix that together. 

4. Scrape your vanilla bean pod add add that to the liquid mixture, then stir it in well. 1 Teaspoon of vanilla extract is just fine if you don't want to bother with a pod. 

5. Add the fresh blueberries to the liquid mixture and stir them in gently. 

6. Pour the entire blueberry liquid mixture to the dry ingredients and mix thoroughly without squashing the blueberries down. 

7. Preheat oven to 350. 

8. Line a muffin pan with muffin/ cupcake liners and fill them with 2- 2 1/2 tablespoons of the prepared muffin batter.

9. Bake at the center of the middle rack in the oven for about 20 minutes or until a toothpick stuck at the center of a muffin comes out dry and clean. 

10. Refrigerate for up to 5 days or freeze in a resealable clear plastic bag and reheat as needed.
