My Peanut Butter Chocolate Chip Pancakes Recipe

Pancakes, chicken fingers, milkshakes and blueberry kugel. These are the kinds of things you'll see on my blog where recipes and food and concerned. This is is because I keep it real. Real, real. Once in a while you see me step out of comfort zone and throw together some fancy grilled fish with aioli and steamed asparagus or a desert that sounds like it was flown in from France on a big jet wrapped in pink tissue paper. Most of the time, it's just real life playing out. I whip up breakfast on a Sunday, I photograph it straight out of the frying pan before anyone can grab a piece and call it my latest triumph in food. There are three hungry boys living in this house, so triumph it certainly is. You'll forgive me if I don't explore with interesting ingredients all the time or throw a pinch of salt over my shoulder these days as a real foodie would, right? 

These pancakes actually were the stuff out of a magazine though, according to the husband who quickly devoured them. I think the peanut butter was on my side, he's a connoisseur of peanut butter. If you like your peanut butter too, here's my recipe. 

Peanut Butter Chocolate Chip Pancakes


1 Cup White Flour
2 Teaspoons Baking Powder
4 Tablespoons White Sugar
2 1/2 Tablespoons Vegetable Oil
2 Large Eggs
1/2 Cup Vanilla Almond Milk
1/2 Cup Mini Semi Sweet Chocolate Chips
1/2 Cup Creamy Peanut Butter
2-3 Pats of butter 
3 Tablespoons Caramel Syrup


1. In a large mixing bowl, combine dry ingredients- flour, baking powders and sugar and whisk lightly to combine. 

2. In a smaller bowl, combine liquid ingredients- vegetable oil, eggs and vanilla almond milk and whisk to combine.  

3. Pour liquid ingredients in with dry ones and mix well to combine. 

4. Place 1/4 cup creamy peanut butter in a small microwave safe bowl and heat in the microwave for 1 minute. Allow to cool for 30 seconds then pour into the bowl with the rest of the prepared batter. Mix well to bring it all together. 

5. Stir chocolate chips into the batter mixture last. 

6. Heat some of the butter in a frying pan and place about 1/4- 1/3 cup of the batter into it's center at a time. Allow to cook for about 2 minutes on each side or until golden. Then remove to a plate. 

7. Stack the pancakes as you go. Then heat the last of the peanut butter in the microwave and dollop it over the center of the top pancake. Drizzle caramel syrup over the tops and sides and serve warm or room temperature.
