My Grilled Sea Bass with Tomatillo Salsa Recipe



The best thing I purchased for my kitchen this year has been my cast iron grill pan. It makes indoor grilling so simple. I most enjoy preparing fish on it, from salmon to sea bass, even halibut. A while back I had an incredible sea bass dish at a local restaurant with a delightful tomatillo salsa but as it was on a special holiday menu, it didn't look like I'd get to enjoy it again any time soon. All of the sudden, I couldn't get it out of my mind and I had to prepare some of my own at home. Although it wasn't quite like theirs, it was pretty perfect and it satisfied my craving immediately.

Here's my recipe: 

 Grilled Sea Bass with Tomatillo Salsa 

Ingredients:

2-6 Pieces of Fresh Sea Bass
2 Tablespoons Olive Oil
1 Tablespoon Fresh Crushed Garlic, Chopped small.
1 Tablespoon Fresh Chopped Parsley
1 Carton Grape Tomatoes, Chopped Small
1 Medium Red Pepper, Chopped Small
2 Large Tomatillos (Green Tomatoes), Chopped Small
1 Teaspoon Apple Cider Vinegar
2 Teaspoons Mrs. Dash Onion & Herb Seasoning
a Dash of Salt and Pepper

Method:

1. Grease a grill pan with about 1 tablespoon olive oil then heat over medium heat. 

2. Sprinkle sea bass with Mrs. Dash Onion & Herb Seasoning on both sides. Then grill for about 7 minutes on each side. 

3. Prepare salsa- chop tomatillos, red pepper, grape tomatoes, garlic and parsley very small. Add apple cider vinegar, a little Mrs. Dash Onion & Herb, and a dash of salt & pepper and mix well to combine.

4. Serve warm grilled seabass with chopped tomatillo salsa.
