My Maple Lemon Grilled Chicken Wraps Recipe

I'm proud to say that although I normally have poor self control with those delicious dairy deserts when Shavuos rolls around each year, I managed to keep my noshing to a minimum this time. I think everyone has a specific weight they know they are most comfortable at. 2-3 lbs. make a big difference to me when it comes to how my clothes sit on me and I've gained a couple of those pounds back over the last several months. I'm happy that I have a food plan I know works well to take them right back off and get me back where I need to be easily, along with a good amount of exercise of course. Whenever I notice I've gained a pound or two, I cut back a bit on my sugar, oil and flour intake and drink plenty of water each day and it makes all of the difference. Notice, I didn't mention cutting anything out, that's always been a fail plan for me because I go into panic mode. I've never been overly keen on those high in protein foods, but I also try my best to incorporate fish and sometimes chicken into my meals to fill me up. This is one of those low calorie meals I can rely on to fill me up while keeping things a bit healthier. Whether you'd like to get back in shape and take off 2-3 lbs. or you'd actually like to lose more then that, I think this meal or any variation of it would be an excellent choice!

Before I share my recipe,  I'd like to offer some variation ideas as always. Replace these wraps with whole wheat or corn ones if you'd like or skip it completely if you are gluten free. I often just throw everything together in one big bowl as a giant salad instead of including the tortilla. Add some sriracha to your mayo for a spicy version or cayenne pepper to your tomato mixture if you like to heat things up a bit. A colorful pepper salsa to toss over the wraps instead of a tomato one would be really tasty and naturally sweet as well. 

And now, here's my recipe: 

Maple Lemon Grilled Chicken Wraps


1/4 Cup Maple Syrup 
The Juice of 1 Whole Fresh Lemon
1 Teaspoon Onion Powder Spice
1/2 Lb.- 1 Lb. Chicken Breasts
1 Large Zucchini, Cubed
1 Cup Fresh or Canned Sweet Corn Kernels
1 Teaspoon Garlic Mayonaise
Salt & Pepper to taste
1 Large Plum Tomato
1 Large Sweet Onion 
1 Teaspoon Fresh Chopped Garlic


1. Wash, Clean and Pat chicken breasts dry. Pound with a meat mallet to thin out, this also helps it cook nice and soft later. 

2. Wash zucchini well and cut into cubes leaving skin/peel on. Chop half of the sweet onion, small and add it to a bowl along with corn kernels. Reserve the other half of the onion for the tomato mixture.

3. Combine fresh lemon juice, maple syrup and onion powder in a small bowl and mix well. Reserve 3 tablespoons of the mixture, setting it aside and pour the rest over the chicken . Allow it to marinate in the refrigerator for an hour- to overnight in a sealable plastic bag. Pour the rest of the reserved marinade over the zucchini and corn and allow to marinate for at least an hour or so. .

4. Pre-heat a cast iron grill for 2 minutes or outdoor grill for 10 minutes. Season the chicken breasts with salt and pepper on both sides.  Cook the chicken breasts for about 10 minutes on each side, brushing with the marinade every 2-3 minutes, cooking until golden in color and cooked through completely and no longer pink on the inside. Allow to rest for 10 minutes and then cut into cubes. 

5. Season zucchini and corn mixture with a bit of salt and pepper and then grill for 10 minutes as well or until nicely golden and cooked through. Remove to a plate to the side until ready to serve. 

6. Chop plum tomato and sweet onion quite small add add 1 teaspoon chopped fresh garlic to it and stir to combine. 

6. Spread white tortilla wraps with garlic mayonnaise and then lay cubed grilled chicken breasts as well as the zucchini mixture out on top. Close the tortilla either halfway or by adding another full tortilla on top and then top the sealed tortilla wraps with the tomato mixture immediately before serving or to the side.
