Waffle Bun Burgers Recipe

I've had all sorts of interesting burgers in my day. Those with runny eggs atop them, some with crispy beef bacon and one with the perfect tomato jam relish, even I don't think I'll ever be able to re-create it. One thing I'd never had and therefore needed to try was a burger on a waffle. Plop a meat patty onto a waffle triangle and seal it with another and bam you're eating breakfast and dinner a the same time- what's that called again- LINNER? These aren't your typical drown in maple syrup or melt chocolate chips onto waffles though, these are my savory corn meal waffles that work absolutely perfectly with ground beef, beef bacon or even might I say grilled cheese- don't put it past me not to try that sometime soon. I could talk about burgers and buns until I'm blue in the face so at last, here is my recipe!

Waffle Bun Burgers:

Yields: Burgers: About 4 Extra Large Patties, 8 Medium Patties or 12 Mini Patties. Waffles: 12 Sets


Waffle Buns:

3/4 White Flour
3/4 Cup Cornmeal
1 Tablespoon White Sugar
1 Teaspoon Kosher Salt
2 Teaspoons Baking Powder
2 Large Eggs
1 Cup Almond Milk 
3 Tablespoons Vegetable Oil 


1 Lb. Ground Beef
1 Egg
1 Teaspoon Dijon Mustard
1 Tablespoon Ketchup
1 Tablespoon Brown Sugar BBQ Sauce 
1 Teaspoon, Fresh Lemon Zest
1 Small Onion, Chopped Small
1/2 Tsp- 1 Tsp. each Salt and Pepper

Sliced Tomatoes, Sliced  Dill Pickles, Butter Lettuce, Fried Onions, Raw Onions and Mayonnaise or Garlic Mayonnaise. 


1. Start by preparing your waffles. Preheat a waffle griddle or waffle maker. Combine flour, cornmeal, sugar, salt and baking powder  in a medium mixing bowl and mix to combine. Add eggs, almond milk and vegetable oil and whisk well to bring it all together. Each waffle maker is a bit different but 1 1/2 tablespoons of batter dropped into the center of the section was just right. Allow it to cook for about 1-2 minutes on each side or until nicely browned and as fluffy or dense as you prefer. Set aside prepared waffles in a dry place while preparing burgers. 

2. In a large mixing bowl, combine ground beef with egg, dijon mustard, ketchup, bbq sauce, lemon zest, chopped onion, salt and pepper. The trick to keeping your patties soft and moist later is to handle the meat as little as possible. Mix all of the ingredients together gently to avoid tough patties later. Gently shape your burgers and either place them on a grill or in an oven on broil for about 5-7 minutes or until doneness you prefer. 

3. Spread waffle bottom with mayonnaise and place a burger patty on top of it. Add toppings like sliced tomatoes, pickles, lettuce, fried onions, raw onions and any other toppings of choice. Spread top half of waffle with mayonnaise as well and seal burger. 

4. Serve warm.
