Snickerdoodle Sandwich Cookies with Cookie Butter Filling Recipe (Video)



How do you take a snickerdoodle cookie to the next level? Oh I know how you've been itching to know the answer to this one so I'll tell you! Spread some soft cookie butter filling over your cookies and then press them together. Eat with a cup of chocolate milk preferably. I'll forgive you if you choose coffee instead. 

Back when there was still snow on the ground, my 7 year old and I decided to make a project of it and  there's a video documenting our whole process, so if you want to see this recipe step by step with cute little 7 year old hands combining the ingredients, watch it here. Here's the recipe, because I know you can no longer resist. Snow or no snow, these are a great mommy- child bonding activity and they'll be finished before you can say snickerdoodle sandwich cookies 3 times. Try saying it 3 times fast...


Snickerdoodle Sandwich Cookies with Cookie Butter Filling Recipe 

Yields: About 16 Sandwich Cookies 

Ingredients:

2 1/2 Cups Flour
2 Teaspoons Baking Powder
1 Cup White Sugar
1/4 Cup Brown Sugar
a Pinch of Salt
1 Teaspoon each Cinnamon, Allspice, Nutmeg
2 Sticks/1 Cup Melted Butter
2 Eggs

Filling:
1/2 Cup Confectioners Sugar
5 Tablespoons Biscoff Cookie Butter
1/3 Cup Vanilla Almond Milk

Method:

1. Combine dry ingredients in a large mixing bowl- flour, baking powder, white sugar, brown sugar, salt, cinnamon, allspice and nutmeg. Mix well with a hand mixer or by hand to combine.

2. Combine eggs and melted cooled butter. Mix well.

3. Pour the butter mixture in with the flour mixture and mix with a spatula, or your hands until a thicker cookie dough is formed. 

4. Roll pieces of dough into 1 inch balls and then roll each one in white sugar. Keeping a decent amount of space between each one, lay out on a parchment paper lined baking tray and preheat the oven to 350. 

5. Bake for 10 minutes or until nicely golden and crisp around the edges. 

6. Remove from the oven and after a few minutes and transfer to a wire rack to cool completely.

7. Prepare the filling. Combine confectioners sugar, cookie butter and vanilla almond milk. Use a hand mixer mix until smooth but thick enough to spread. 

8. Once cookies have cooled, spread one on the inside with the cookie butter filling and seal with a second cookie, creating a sandwich. And then serve.
