Good old Reismans plain hamantaschen with the jam filling are my absolute favorite. I've seen lots of cool hamanstaschen both sweet and savory over the years but none have ever beat those in my mind. Those basic hamantaschen can be a real handful though. Sometimes the dough is too sticky, sometimes it comes out too dry. Often the dough is perfect but then after pinching perfectly, they go into the oven only to open right up minutes later. They really are tricky! That is why I stored my basic no fail recipe with tips for getting them right every time in a post back in 2014. This year may bring about some of those classic hamantaschen in my kitchen, but to avoid the whole hassle I decided to do something a little bit more simple this time.
One weekend I had plans to have guests and was at a total loss as to what to bake for desert. Me and baking often don't do well. I bought a pre-made graham cracker pie crust, pre made cookie dough and mini marshmallows. I then pressed the cookie dough into the graham cracker crust and baked it, topping it all with the marshmallows in the last 3-4 minutes to toast. It was the best quick desert I have ever made! That is what gave me the idea for these hamantashen. I know that the Ostriechers cookie dough is reliable in consistency and so I made use of it once again. Feel free to use any cookie dough recipe you have on hand. Had I had more time, I would have done that part from scratch as well.

1 Ostreichers Box of 24 Pre-formed Cookie Dough
1/2 Cup Mini Marshmallows
1 Sleeve (9) Cinnamon Graham Crackers
Marshmallow Fluff (optional)
