Ginger Bread Pancakes with Sliced Bananas and Chocolate Syrup Recipe

Something about being snowed in has me rushing to the kitchen to whip up a large breakfast/brunch! It has brought about some of my best hot drink recipes of all time and on this particular morning, a short stack of pancakes so tasty. They were devoured within minutes of being piled onto the plate with just a bit of syrup left for evidence. 

You hear about my cooking triumphs here a whole lot, but if I had a dollar for every pancake recipe I failed at, I'd probably be able to afford fresh cooked pancakes in bed every day! I've gotten dense, overcooked, under cooked, too thick, tasteless, over-seasoned...the list goes on and on. I've never stopped trying. And these Ginger Bread Pancakes with Sliced Bananas and Chocolate Syrup are everything a failed pancake cook could aspire for and then some! 


1 Cup Flour
1 Tablespoon White Sugar
1 Tablespoon Brown Sugar
1 Teaspoon Salt
1 Teaspoon Baking Powder 
1 Teaspoon Baking Soda
1 Tsp. Ginger Spice
1/2 Tsp. Cinnamon Spice
1 Egg
1 Cup Milk 
4 Tablespoons Butter

1 Banana Sliced
1 Tsp. Chocolate Syrup, to drizzle


1. Place the flour, white sugar, brown sugar, salt, baking powder, baking soda, ginger and cinnamon in a medium mixing bowl and gently whisk together. 

2. Add the egg, milk and 2 tablespoons of melted butter to the dry ingredients. Give the mixture a good whisk without overdoing it, just to get rid of any lumps throughout the batter. Over-mixing can be the cause of dense pancakes, so be careful.   

3. Heat a non stick frying pan over high heat and add 2 tablespoons of butter. Let that melt down. Then lower the heat to medium. Spoon in about 3-4 tablespoons of pancake batter into the center of the pan, allowing it to spread slightly. 

4. Allow each pancake to cook for about 1-2 minutes on each side until they are fluffy and cooked through. 

5. Remove each pancake to a plate, topping each one with the next one as they are ready, to create a little short stack. 

6. Slice your banana to a medium thinness. Then top the pancakes with several slices and drizzle it all generously with the chocolate syrup.
