My Black Bean Burgers with Meunster and Russian Dressing Recipe


New year, new you. Healthy food is where everyone suddenly turns as soon as those 365 days finish. I am so with you on that, especially as I am currently flying back from an over indulgent vacation with an abundance of good food all around.  Meals like these tasty Black Bean Burgers with Meunster and Russian Dressing are where it's at. Try my recipe and you will agree! The first thing I thought when I took my first bite- these taste like real burgers, beef burgers that is. On the side, I served some really great sweet potato fries with a lime chili sauce. Make it even more healthy by serving it on portabello mushroom caps or even bun-less. Another way to cut down on the calories with this one is to bake the patties instead of frying them as recommended below.

Black Bean Burgers with Meunster and Russian Dressing

Ingredients:

1 15 oz. Can Black Beans
1 Cup Panko
1/4 Cup Grated Shallot
1 Egg
Salt and Pepper to taste
1 Tsp. Chili Powder
1 Tsp. Mesquite BBQ Seasoning
5 Tablespoons Olive Oil
4 Slices Orange Rind Muenster Cheese
Burger Buns
Romaine Lettuce- (pieces) and Sliced Tomatoes
Russian Dressing (bottled)

Method:

1. Drain the can of black beans, place them in a medium sized bowl and mash them with a large fork. Add the panko, grated shallot, egg, salt, pepper, chili powder and bbq seasoning.

2. Divide the bean mixture and form into equal patties. Keep in mind that bean burgers do not shrink down at all once cooked like beef does, so however large they are when you cook them is how they will be when they are finished.

3. Heat the olive oil in a frying pan over medium heat and add the patties two at a time. Cook until browned and more solid for about 2-3 minutes on each side. When you flip the first time add the meunster cheese to the top of the patty and let it melt over the sides before removing it to the bottom half of the bun.

4. Top the patty with tomato, lettuce and russian dressing before closing with the top half of the bun.

5. Serve cold or warm.
