Reduced Calorie Desert Recipe: Individual Caramel Chip Cheesecake Chocolate Souffle

Ok I know the name is a bit long on this one but I really couldn't decide what to call it. The Jewish holiday of Shavuos is coming up and will be on Tuesday next week. If you know about Shavuos the very first thing that will pop into your head will probably be cheesecake but that's really not what it's all about. Read more about this holiday here. As is custom, dairy foods are eaten during this holiday and that is where the cheesecake comes in. As you most likely already know I am on a diet and have a goal to drop about 5 lbs and 2 inches by the time Summer rolls around. Although this holiday may be a good excuse to indulge I am going to try my best to keep from getting derailed and keep the pounds off. It was hard work getting where I already am and it's going to take perseverance to stay on track. With that said I still want to be able to have my cheesecake! It is for that reason that I dedicated this week to researching the perfect ingredients and method for a cheesecake that was delicious but at the same time not overflowing with calories, sugar and carbs. I am thrilled to have accomplished just that and I am happy not to have to feel guilty as I dig into this desert over the holiday.

Obviously we are still talking about a cheesecake so I would save this for a treat as it's not calorie-less but it is definitely alot less "expensive" in calories in comparison with your classic cheesecake. So if you are looking to stay the same dress size and enjoy your cheesecake too over this holiday look no further I've got the recipe for you. And did I mention the actual preparation took no time at all. I'm not kidding around: I whipped this up by hand in less then 10 minutes! To cut down on the calories even more you can bake your batter in cupcake tins, one of those little guys won't do much damage to your waistline!

Individual Caramel Chip Cheesecake Chocolate Souffle: 

Serving Size: 1 Medium Sized Souffle= 2 Large Slices of Cheesecake

Compared to a rich classic cheesecake which would be about 1500 calories for 2 Large Slices


Chocolate Souffle:

1/4 Cup Cocoa Powder
1/4 Cup Whole Wheat Flour
1/4 Teaspoon Baking Powder

1/8 Tsp Salt
1/4 Cup Sugar

1 Egg White
3 Teaspoons Oil
1/4 Water


8 oz Tnuva Fat Free Cream Cheese
1 Egg Yolk
1/4 Cup Sugar
1/8 Tsp. Salt
1/4 Cup Bakers Choice Caramel Chocolate Chips


1. Start by preparing the chocolate souffle- in a large mixing bowl, combine the dry ingredients first- cocoa powder, flour, baking powder, salt and sugar. Mix them well. Then add the wet ingredients- the egg white, oil and water. Mix very well with a whisk till it a batter has formed and it is completely smooth with no lumps of powder at all. 

2. Preheat the oven to 350 at this point.

3. Now start on the cheesecake part- in a medium sized mixing bowl combine the cream cheese, egg yolk, and sugar and mix well to combine. Once it is smooth in consistency add the chocolate chips and stir them in. 

4. Spray a round non stick Pyrex or other round baking dish with a cooking spray. Pour the chocolate souffle batter into the bottom of the dish till the dish is filled about halfway. Then spoon the cheesecake mixture into the center carefully so that it lands nicely and doesn't splatter or mix. The chocolate part will rise up a bit to swallow it and it should just stick out at the top a bit. 

5. Carefully place the dish in the oven and let it bake for 30 minutes. 

6. After 30 minutes shut the oven but leave the cake in there to sit and cool off slowly and completely. 

7. Remove the dish from the oven once it has cooled and you can then refrigerate it or slice it and serve it.
