Recipe: Penne with Beef Sausage Sauce

I am bringing back an old recipe from the archives today. I'm most likely going to be doing this quite a bit in the future as many of them had their photos deleted in that google photo fluke that took place on my blog a couple of months back and others have just been updated slightly. Preparing this again tonight reminded me of how fantastic this recipe actually is. I have heard lots of great feedback about it from others that have tried it too so I knew I wanted to share it again today.


Ever since I found these Jacks beef sausages in my supermarket I have loved them and I have prepared them in many different ways. I have cooked them with peppers and served them in a baguette. I have cut them up and wrapped them in puff pastry dough. Some of those recipes are even posted here on my blog {Sweet Beef Sausage & Pepper Rolls} & {Beef Sausage Piggie in Blankets}. I think I have tried almost everything from baking, cooking, frying and deep frying. These sausages come in all types of flavors- Mexican, Sweet Italian, sweet ones, spicy ones and such. I have seen penne cooked with ground beef or meat sauces before and that is where this idea came to me from. What I really love about this recipe is that it is quick and simple, kid friendly (adults love it too) and so delicious. Check for these at your local kosher grocery, you shouldn't have any problem finding them. 

And finally here is the recipe:
Penne with Beef Sausage Sauce:

1 Package "Jacks Gourmet" Kosher Beef Sausages in flavor of choice
1 Shallot, Chopped Small
1 Tsp. Fresh Garlic, Diced
3 Tablespoons Olive Oil for Frying
1/2 lb- 1 lb Penne Pasta
1/2 Cup Tomato Sauce (Ungars)
3 Tablespoons Sugar
1 Tsp Salt, Pepper, Paprika (add some cayenne pepper if you like spicy foods)
1 Tablespoon Red Wine Vinegar
1. Cook the penne pasta in salted boiling water until fluffy and almost fully cooked and put it to the side while preparing sauce.
2. Slice Beef Sausages into small rounds. Place them in frying pan with olive oil, garlic and chopped shallot. Let them fry a little on a medium sized flame. They should begin to puff up and release juices.
3. Add tomato sauce, sugar, spices and red wine vinegar to the pan. Raise the flame to medium and bring the sauce to a boil, then lower it once it has. Let it cook up into more of a sauce for  5-10 minutes and then add the cooked pasta for the last minute so that it can finish off cooking and come together.
4. Serve warm with french fries, salad or any other side dish of choice.
