This is one of those healthier dishes I prepared recently. It went well with my diet of the moment and I think it would be a great dish to serve at a chanuka party as it really did not exert too much effort to prepare and was equally delicious. With the piles of greasy latkes, donuts and chocolate coins that tempt us for 8 days long, a recipe to keep the calories low and the extra pounds off is surely in order. Look forward to some more Chanuka recipes to come- latkes, donuts etc. And now for this simple Goat Cheese Salad Recipe.
Baked Goat Cheese Salad with Lemon Pepper Dressing:
1 Goat Cheese Log
1 Cup Jason's Seasoned Bread Crumbs
1 Container of Grape Tomatoes
1/2 Cup of Canned Black Olive Rings
I Can Whole White Button Mushrooms, Sliced in Half
1 Small Red Onion, Diced
3 Teaspoons Lemon Juice
1/2 Tsp Black Pepper
A little bit of Salt
2 Tablespoons Olive Oil
1 Teaspoon Honey
1. Slice the goat cheese log into thin rounds. Create a breading station with two plates. Pour the seasoned breadcrumbs into one and whisk the two eggs up on the other. Then bread the goat cheese one by one by dipping them into the egg then coating them in bread crumbs, going back into the egg and then finally back into the bread crumbs. Grease a Pan and lay all of the breaded goat cheese pieces out in the bottom. Bake them on 350 for 20 minutes or until they are golden and have an nice crispy coating all the way around.
2. Prepare the salad- Rinse the grape tomatoes and slice them all in half. Place them in a large salad bowl. Add the black olives rings, sliced mushrooms and diced red onion and mix to combine.
3. Prepare the dressing. Whisk the lemon juice, olive oil, salt, pepper and honey together in a small bowl.
4. Pour the dressing into the prepared salad and mix everything together. Then top it with the pieces of breaded goat cheese immediately before serving.
