2 Healthier Foods A Desert- Mini Strawberry Apple Pies and a Side Dish- Baby Spinach Salad

As I mentioned at the beginning of the week I am trying to eat healthy this week to prepare for all the high calorie purim eating which is most likely going to happen!
Here's to me trying to be healthy! :)

My latest "recipe" that I would like to share with you is literally 3 ingredients. Therefore I am not taking credit for thinking it up and I won't even actually call it a recipe. It's more like something I whipped up for a healthier desert to avoid a much desired brownie, chocolate chip cookie or any other high calorie desert.

What you will need:

1 Package Mini Pastry Shells
1 Can Apple Pie Filling
A Bunch of Frozen Strawberries

I combined the strawberries with the apple pie filling and put about a spoonful into the pastry shell.  (put not more then 1 strawberry per pastry and don't overfill the pastrys or they will fall apart)  Then baked it on 450 for 35 minutes.

It was so good! A successful healthy desert.

I want to share with you a second really healthy food also containing apples that was so great:

I made a delicious healthy salad on Sunday.  Also a really simple recipe ingredients wise. It got eaten and was way gone before I could even snap a picture. (sorry!) I will give you the recipe now anyways. I will definitely serve this one again so I will take a picture then and post it here eventually.

Here is what was in the salad:

1 Bag Baby Spinach Leaves
2 Red Apples, cut into small cubes
About 3 Tabelespoons Crumbled Goat Cheese

1 Tablespoon Olive Oil
2 Tsps Balsalmic Vinegar
1 Tsp Honey

Toss the baby spinach, apples and goat cheese together in a salad bowl to combine. Then combine the dressing ingredients. Keep the dressing in a container to the side. Then drizzle it over the salad once ready to serve. It's a really healthy choice for a dinner side dish or a quick lunch. And did I mention it was so yum! The whole combination just worked so well.
