Spiced Salmon with Pineapple

For those of you who don't know yet, I am a huge fan of Salmon. I never even try making other types of fish anymore! I am constantly on the lookout for some salmon inspiration. My husband isn't a fan of any fish, besides for gefilte fish (which doesn't really count :) ) therefore I only make it for myself for Shabbos and never as a dinner during the week. Lately my husband has been trying my salmon that I prepare for Shabbos though and he is enjoying them! :)

Here's the latest salmon recipe:

-A Few Slices of Baby Salmon Fillet
-Paprika, Chili Powder, Cinnamon, Onion Powder, Garlic Powder, Salt, Pepper, Sugar- a little of all mixed together as a rub to taste.
-1 Small Can Crushed Pineapple
-1 Large Shallot, circle sliced
-Some oil for frying

Put the salmon in a container and pour the pineapple over it. Leave it to marinate for about 30 minutes in refrigerator. Take the salmon out of the container with a slotted spoon and add it to a baking pan skin side down. Fry up the shallot in some oil. Mix all the spices together in a bowl to creat a rub and sprinkle it over the fish to create a crust. Carefully put the pineapple and shallots over the top of the spiced salmon. Spoon the leftover olive oil and pineapple juice over the pineapple and shallot on top of the salmon and to the sides to keep it from burning. Bake on 400 for 20-25 minutes. Serve cold or warm. 

    Did I mention Salmon is also one of my favorite colors! What girl doesnt like this gorgeous shade of pink? That Salmon Color is just so pretty!
