Roasted Green Beans with Mushrooms

Like so many young children, I was not very fond of veggies as a kid. Of course my mother tried to get me to eat spinach, broccoli etc. I even remember that my mother and sister called water chestnuts from the stir fry veggies "magic things" in the hopes that I would eat them. The funny thing is that nowadays as an adult I cannot get enough of vegetables. In fact they are probably one of my favorite food types- potatoes, green beans, mushrooms, onions, baby spinach, broccoli to name a few. Green beans are tricky for me. I am pretty picky with how I like them. So I really play around with them alot trying to find ones that are really good. Also, My husband is really not a fan of Green beans. He usually avoids them no matter how I cook them up. So my next goal was to make ones that he wouldn't be able to resist trying. And I finally succeeded after a while of trying. My husband couldn't get enough of these Green beans and I was also really happy with the finished product. They were delicious. So without further ado here is the recipe:

-1 Lb Green Beans, Ends Snipped off.
-1 Large Onion. Sliced in desired manner
-1 Large Package White Mushrooms, Cleaned, Stems Removed and Chopped up
-A Small Bunch Scallions, Greens Only, Sliced Small
-3 Tablespoons Olive Oil
-2 Teaspoons Soy Sauce
-1 Teaspoon Fresh Garlic
-1 Teaspoon Balsamic Vinegar
-1 Tablespoon Brown Sugar
-1 Tsp Black Pepper
-1/2 Tsp Parmesan Cheese (Can be left out if you are serving as a side with meat)
-5 Tablespoons Hot Water

Preheat oven to 500 Lay out Green beans in a 9x13 pan. Top with Onions, Scallions and Mushrooms. Prepare Sauce in a small sauce bowl first add olive oil, soy sauce, fresh garlic, balsamic vinegar, brown sugar, pepper Parmesan cheese and then add hot water last. Stir and combine till thick and saucy. Spoon Sauce over Veggies in pan and to the sides. Put in the oven for 35 minutes. Stir the veggies a little about  halfway through baking and put back in the oven to finish.

Last weeks post for staying in shape was also Green beans. As I have no found an amazing Green bean recipe I am no longer in search and I will have more of a variety of recipes coming- salads, chickens, potatoes etc. for those of you who are watching your calories etc.
