Green Beans with Carmelized Shallots & Almonds

A really nice side dish for veggie and non-veggie lovers! For those of you who are trying to watch their weight I just want to apologize for all the deep fried and cheesy recipes lately. This post is for you. This would make a great salad lunch to bring to work etc. I will also try to start posting at least one very healthy recipe per week. Losing weight isn't easy and I know that well. I have 4 lbs. to go to reach my ultimate weight loss goal! Once I do I will write a post all about my weight loss tips- my favorite foods for easy dieting, my exercise routine and favorite websites used to help me through the process.

                                                                   1 lb. Green Beans
2 Large Shallots, Chopped Small
3 Tablespoons Slivered Almonds
2 Tablespoons Olive Oil
1 1/2 Tablespoon Brown Sugar
A Pinch of Salt and Cayenne Pepper (or a little Black pepper if you don't like spicy foods)
1 Tsp Lemon Juice
Snip ends of green beans and put them in a pot of salted boiling water. Let them cook for about 5-8 minutes or until light green and soft. In the meantime saute' shallots in olive oil for about 4 minutes in a non stick frying pan. Once transclucent add salt, pepper, brown sugar and lemon juice. Allow them to carmelize a few minutes. Remove green beans from pot with slotted spoon shaking to remove any leftover water. Add it to the shallot mixture and leave the flame on for another minute or so stirring to combine the green beans with the carmelized shallot mixture. Add the slivered almonds right before serving tossing them in.
