Rice-A-Roni Stuffed Red Peppers


Red Peppers Cleaned out and Halved Width Wise
1/2 lb Macaroni cooked in salted boiling water
1 Cup Basmati Rice cooked in salted boiling water
4 Tablespoons Ketchup
1 Cup Shredded Mozzarella and Cheddar Mix + A Few Tablespoons For Topping
1 Tablespoon Parmesan Cheese
Veg Oil for greasing pan
Salt and Pepper
Combine cooked Macaroni, Cooked Rice, Ketchup and Shredded Cheese. Stuff Halved Peppers with mixture till just over-flowing. Sprinkle with a little salt and pepper and Parmesan cheese. Then spread some more of the cheddar and mozzarella cheese over the top of the pepper and mixture stuffed inside it.

Grease a baking pan and lay out stuffed Red Peppers. Bake on 400 for 25 minutes.

Serve Warm.
