Cheesy Rolled Red Peppers


 I clearly need a new camera! I still have an old olympus FE-230 that has a crack down the front of the screen. I want to find the perfect one though so it may take some time until my pictures start looking more focused without the shine where the light is etc. Keep checking back and you will see a huge difference in the way the pictures look. I'm really looking forward to that for so many reasons! I am now looking into the Canon Rebels. If any of you have any ideas on good camera with a good zoom etc. please let me know. I know very little about cameras and I want a really great one.



-3 Red Peppers
1 Cup Mozzarella Cheese
1/4 Cup Black Canned Sliced Black Olives

Cut off ends of peppers. I use red because they are the sweetest. Clean them and rinse them. Halve them and place them skin side up in greased pan. Roast in oven or toaster for 20 minutes or until skin looks remove-able. Once cooled remove skin. Place the side skin was removed from upwards in pan and sprinkle mozzarella cheese and black olives over it. Roll it up and stick a skewer through it. Bake for 10 more minutes on 350 or medium heat till cheese is melty. Serve warm.

Don't like black olives and mozzarella cheese? You can substitute with feta cheese, mushrooms, green olives, jalepeno peppers, hot sandwich peppers, riccotta cheese, cheddar cheese etc. any of those will go well!
