Blueberry Apple Kugel

This may be called Blueberry Apple "Kugel" which should then be served as a side dish like any other kugel would. I feel like this is such a sweet and yummy kugel that it can really be served for a desert which is what I do but that is just something of preference. I, like most other women try to watch my weight and eat a little more healthy etc. During the week I am extremely careful with what goes in my mouth, but Shabbos is a true day of rest for me. I don't go crazy and pig out on candy and cake but I do enjoy some food I wouldn't eat during the week. This is one of those snacks/deserts that is just sweet enough to be my extra indulgence but not add too many pounds ;)


3 1/2 Cups Flour
1 Cup Sugar
1 Cup Oil
1 Egg
1 Tsp Baking Powder
4 Green Macintosh Apples
1 Large Can Blueberry Pie Filling
1 tsp Brown Sugar


Prepare crust/crumble topping: Combine flour, sugar, oil, egg and baking powder either in an electric mixer or by hand. Once it is a solid crust take about half the mixture and crumble it into the bottom of a greased pan (round or 9x13 both work) pressing it down all over to create an even layer and pack i. Peel and core apples. cut apples into small pieces. Spread them over crust created in bottom of pan. Sprinkle tops of apples with brown sugar. Then spread spoonfuls of pie filling over apples evenly. Take the rest of the crust mixture and top the rest of the layers already in the pan with it. Spread it out for an even layer of top crust. Bake on 400 for 1 hour or until crust on top has browned.

This can also be done in a pie crust. Just lay out apples and blueberrys in pie crust and top with your own crumble. Also delicious!
