Chanuka 2011- Cheesy Red Pepper Latkes (Pancake Style):

Cheesy Red Pepper Latkes (Pancake Style):

-7-8 Medium Yukon Gold Potatoes
-2 Eggs
-Salt and Pepper to Taste
-1 Small Onion
-1 Small Red Pepper
-1 Tsp Chopped Fresh Garlic
-1 Tablespoon Parmesan Cheese
-1 Tsp Flour
-Oil For Frying


Peel Potatoes. Place in blender ( I did it this way to get more of a pancake style latke)  or food processor with eggs, Salt and pepper, onion, red pepper, fresh garlic, parmesan cheese and flour. Blend till smooth.

Place Oil In frying pan and fry 2 Tablespoons of potato mixture at a time. Once the pancake/latke seems golden on both sides lay out on paper towels to let out any excess oil from frying. Serve Warm.

Took two latkes once cooled off. Placed a piece of american cheese in the center with a romaine lettuce leef and topped it with some sliced yellow pepper.

This has been a very nice Chanuka! We've been eating way too many latkes and donuts like everyone else. Nothing a little exercise won't take care of.

I got an amazing gift from my father this Chanuka!
A handmade cutting board. My father is a great woodworker. He made this in his shop for all the women in the family. It was very thoughtful and it is definitely very useful for someone like me who loves to cook!
