The first cookbook I ever owned was the Quick & Kosher- for the bride who knew nothing cookbook. I for one am not a big fish eater but the one fish I do like is Salmon so I always like finding new ideas to prepare it. This recipe was inspired by/incorporated from that cookbook.
Dijon Salmon:
Ingredients:
2 or more pieces of Baby Salmon Fillet
Spice Mixture- 1 Tsp Dill,1 Tsp Parsley ,1/4 Teaspoon Salt, 1/4 Teaspoon Black Pepper
Sauce:
1/2 Cup Mayonnaise
1 1/2 Tablespoons Dijon Mustard
-1/2 Tablespoon Lemon Juice
1 Teaspoon Prepared Minced Garlic
1 Tsp Dill
1 Teaspoon Sugar
1/4 Teaspoon Pepper
Method:
1.Preheat Oven to 450.
2. Rinse the pieces of fish and place them in a greased baking pan.
3. Prepare the spice mixture in a small bowl- combine the dill, parsley, salt and pepper and sprinkle generously over each piece of fish.
4.Bake uncovered for 20 minutes.
5. Prepare sauce- place sauce ingredients in small bowl and whisk to combine.
6. Drizzle the sauce over the salmon and put it back in the oven for 5 more minutes.
7. Serve warm, room temperature or cold. I like it warm.
